Ingredients:
Potatoes : 6-8 (medium cubed)
Eggs : 3 (hard boiled, peeled and chopped)
Coriander leaved : 1/2 cup chopped
Onion : 1/4 cup chopped
Green Onion : 1/4 cup chopped
Mayonnaise : 1 cup
White Vinegar : 1 table spoon
Sour Cream : 1 table spoon (optional)
Salt : 1/4 tea spoon
Black Pepper : 1/4 tea spoon freshly ground
Method:
Cut the potatoes into bite size chunks and put in a medium saucepan. Coven the potatoes with water and bring to boil. Reduce heat to medium and boil for about 8 to 10 minutes, or until potatoes are just tender. Drain and cool completely. Put the potatoes in a large bowl with the chopped eggs, coriander leaves, onion and green onion. Chill thoroughly. Combine the mayonnaise, white vinegar, sour cream, salt and pepper. Gently stir the mayonnaise mixture into the potato mixture until well blended.
